Blue Berry Mousse
Ingredients
- 500g Ricotta – drained
- 2 tablespoons Sugar or Coconut Sugar
- 1 tablespoons Honey
- 1 cup frozen or fresh Blue Berries
- 1 teaspoon Red Beet Crystals – optional
Directions
- Beat all ingredients in a food processor on high for 1 minute. Scrape down sides.
- Process a further 2 minutes or until soft and smooth.
- Decorate with Cherries or Blue Berries and Mint Leaves.
- Red Beet can be found in chemists or health shops, it adds colour and nutrition.
