Blue Berry Mousse

Blue Berry Mousse


  • 500g Ricotta – drained
  • 2 tablespoons Sugar or Coconut Sugar
  • 1 tablespoons Honey
  • 1 cup frozen or fresh Blue Berries
  • 1 teaspoon Red Beet Crystals – optional


  • Beat all ingredients in a food processor on high for 1 minute. Scrape down sides.
  • Process a further 2 minutes or until soft and smooth.
  • Decorate with Cherries or Blue Berries and Mint Leaves.
  • Red Beet can be found in chemists or health shops, it adds colour and nutrition.
